Dororo the Anime isnt old but the source material is. Beautifully animated action. Every few episodes theres a new B plot with some good drama.
Trigun is a classic and has probably the most 90s aethetic you can find if you really that old feel.
FMA and FMA brotherhood have some fanservice sprinkled in but its few and far between
I highly recomend Golden Kamuy if you truly want a unique story that keep you on edge. It has fanservice…but its all centered on the male characters…

If you're into historical older animes I definitely recommend The Rose of Versailles. It's a bit cheesy in certain places but it's a cozy watch.

.hack//SIGN is one of my top favorite older series. It's an early isekai that tells a very serious, dark story. It doesn't have much action but the interactions between characters, and the mystery they are following, are very interesting. Also it has one of the best anime OSTs I've ever heard.

Overall, .hack is a very detailed series involving multiple animes, games, and books. There are other .hack animes but imo SIGN was the best one. I'd watch ROOTS only if you are planning to play GU directly afterward since it's a prequel story for that game. And the other animes only if you are interested in some additional lore.

I've watched the first 3 series you mentioned and they are also excellent recommendations. Dororo was my favorite out of those.
